The property is owned currently by Guido Serio who acquired the property in 1983 and began the restoration process by 1990. Both the Chianti Classico wineries vineyards and the buildings are now a monument to hard work and a long term vision. The wines produced there are intended to represent both an elite wine to match the site and simpler wines so that everyone who loves wine can enjoy the taste of the vintage.
Cultural Site and Wine Producer
Serio employed premier winemaker Ferrini and viticulturist Giorgio who can take credit for turning the cultural site into an unparalleled wine production facility. The most prestigious wine is a blend noted for vibrancy and crispness called Cerviolo Rosso. The San Fabiano Calcinaia winery in Chianti Classico Italy also produces the prize blend Chianti Classico Riserva Cellole.
The Varietals
The vines in the relatively young Chianti Classico wineries range in age from 1985 to 2003. There are two main vineyards, totaling 44 hectares in and near Chianti. The grape vines come from Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Merlot and Sangiovese stock.
